Description

This flavorful Sausage and Rice recipe combines smoky sausage with tender rice and vibrant vegetables, cooked together in one skillet for a quick and hearty meal. Perfect for busy weeknights, it features a balance of spices, fresh veggies, and an optional cheesy finish for added indulgence.

Ingredients

Scale

Sausage and Vegetables

  • 1 lb (450g) smoked sausage or andouille sausage, sliced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper (red or green), diced
  • 2 cloves garlic, minced

Rice and Seasonings

  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 cup uncooked white rice (or brown rice, adjusted for cooking time)
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, drained

Optional Additions and Garnish

  • 1 cup frozen peas or corn (optional)
  • ½ cup shredded cheddar or Parmesan cheese (optional)
  • Chopped parsley or green onions (for garnish)

Instructions

  1. Cook the Sausage & Veggies: Heat olive oil in a large skillet over medium heat to prepare for sautéing.
  2. Brown the Sausage: Add the sliced sausage and cook each side for about 3-4 minutes until nicely browned. Remove the sausage from the pan and set it aside.
  3. Sauté Onion, Pepper, and Garlic: In the same skillet, cook the diced onion, bell pepper, and minced garlic for about 3 minutes until softened and fragrant.
  4. Add Rice & Seasonings: Stir in the uncooked rice along with smoked paprika, dried oregano, salt, and black pepper to evenly coat the rice with seasonings.
  5. Toast the Rice: Cook the rice mixture for 1-2 minutes, stirring frequently to lightly toast the grains without burning.
  6. Add Liquids and Tomatoes: Pour in the chicken broth and drained diced tomatoes to combine all ingredients.
  7. Return Sausage to Pan: Add the browned sausage back into the skillet and bring the entire mixture to a boil.
  8. Simmer the Rice: Reduce the heat to low, cover the skillet, and simmer for 15-18 minutes until rice is tender and liquid is absorbed.
  9. Add Vegetables: Stir in frozen peas or corn if using, and cook for an additional 2 minutes to heat through.
  10. Finish with Cheese: Sprinkle shredded cheddar or Parmesan cheese over the top if desired, allowing it to melt into the dish.
  11. Garnish: Top with freshly chopped parsley or green onions to add color and freshness.
  12. Serve Warm: Plate the dish while warm and enjoy this quick, satisfying sausage and rice meal!

Notes

  • Brown rice can be substituted for white rice, but increase cooking time and liquid accordingly.
  • Andouille sausage adds a spicier, smoky flavor, but any smoked sausage works well.
  • Adjust salt to taste especially if using salty sausage or broth.
  • Cheese and vegetables are optional but add more depth and nutrition.
  • Leftovers reheat well and can be stored in the fridge for up to 3 days.
