- 1 small onion, diced
- 1 bell pepper (red or green), diced
- 2 cloves garlic, minced
Rice and Seasonings
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 cup uncooked white rice (or brown rice, adjusted for cooking time)
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, drained
Optional Additions and Garnish
- 1 cup frozen peas or corn (optional)
- ½ cup shredded cheddar or Parmesan cheese (optional)
- Chopped parsley or green onions (for garnish)
Instructions
- Cook the Sausage & Veggies: Heat olive oil in a large skillet over medium heat to prepare for sautéing.
- Brown the Sausage: Add the sliced sausage and cook each side for about 3-4 minutes until nicely browned. Remove the sausage from the pan and set it aside.
- Sauté Onion, Pepper, and Garlic: In the same skillet, cook the diced onion, bell pepper, and minced garlic for about 3 minutes until softened and fragrant.
- Add Rice & Seasonings: Stir in the uncooked rice along with smoked paprika, dried oregano, salt, and black pepper to evenly coat the rice with seasonings.
- Toast the Rice: Cook the rice mixture for 1-2 minutes, stirring frequently to lightly toast the grains without burning.
- Add Liquids and Tomatoes: Pour in the chicken broth and drained diced tomatoes to combine all ingredients.
- Return Sausage to Pan: Add the browned sausage back into the skillet and bring the entire mixture to a boil.
- Simmer the Rice: Reduce the heat to low, cover the skillet, and simmer for 15-18 minutes until rice is tender and liquid is absorbed.
- Add Vegetables: Stir in frozen peas or corn if using, and cook for an additional 2 minutes to heat through.
- Finish with Cheese: Sprinkle shredded cheddar or Parmesan cheese over the top if desired, allowing it to melt into the dish.
- Garnish: Top with freshly chopped parsley or green onions to add color and freshness.
- Serve Warm: Plate the dish while warm and enjoy this quick, satisfying sausage and rice meal!
Notes
- Brown rice can be substituted for white rice, but increase cooking time and liquid accordingly.
- Andouille sausage adds a spicier, smoky flavor, but any smoked sausage works well.
- Adjust salt to taste especially if using salty sausage or broth.
- Cheese and vegetables are optional but add more depth and nutrition.
- Leftovers reheat well and can be stored in the fridge for up to 3 days.
