Description

Sausage Hashbrown Bites are a deliciously savory and cheesy breakfast appetizer that’s perfect for parties or make-ahead meals. Combining crispy hashbrowns, flavorful breakfast sausage, and sharp cheddar cheese, these bite-sized muffins bake to golden perfection and are an easy-to-eat morning delight.

Ingredients

Scale

Main Ingredients

  • 3 cups frozen shredded hashbrowns (thawed and drained)
  • 1/2 pound breakfast sausage (cooked and crumbled)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 3 large eggs
  • 1/4 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin to prevent sticking.
  2. Combine Ingredients: In a large bowl, mix together the thawed and drained hashbrowns, cooked sausage, cheddar cheese, Parmesan cheese, eggs, milk, garlic powder, onion powder, salt, and pepper until thoroughly combined.
  3. Fill Muffin Tin: Spoon the mixture evenly into the prepared mini muffin tin, pressing down slightly with the back of a spoon to compact the mixture for firm bites.
  4. Bake: Place the mini muffin tin in the oven and bake for 20–25 minutes, or until the tops are golden brown and the bites are set through.
  5. Cool and Serve: Let the sausage hashbrown bites cool in the pan for 5 minutes before carefully removing them. Garnish with chopped green onions if desired and serve warm.

Notes

  • You can swap in turkey sausage for a lighter option or add diced bell peppers for extra flavor and color.
  • These bites freeze well—just reheat in the oven or microwave before serving.
