- Squeeze of ½ lime
- Fresh cilantro; optional
- Flour tortillas (warmed)
Instructions
- Preheat the Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for roasting the shrimp and vegetables.
- Mix Ingredients: In a large bowl, combine the peeled and deveined shrimp, sliced green, red, and orange bell peppers, sliced onion, extra virgin olive oil, salt, minced garlic, black pepper, chili powder, onion powder, ground cumin, and smoked paprika. Stir well to make sure everything is evenly coated with the oil and spices.
- Prepare Baking Sheet: Lightly drizzle a baking sheet with olive oil to prevent sticking, then spread the shrimp and vegetable mixture evenly over the sheet in a single layer.
- Bake and Broil: Place the baking sheet in the oven and bake at 425°F for 10 minutes. After that, switch the oven to the broil setting and broil for an additional 2 minutes or until the shrimp are fully cooked and slightly charred.
- Warm Tortillas and Serve: While broiling, add the flour tortillas to the oven to warm them up. Once done, remove everything from the oven, sprinkle the fajita mixture with fresh cilantro if desired, squeeze the lime juice over the top, and serve immediately with the warm tortillas.

- Be careful not to overcook the shrimp during broiling as it can become tough and rubbery.
- Feel free to substitute flour tortillas with corn tortillas for a gluten-free option.
