Marinade
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- Salt and pepper to taste

Instructions
- Prepare the Marinade. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and pepper until well combined, creating a flavorful base for the shrimp and vegetables.
- Marinate the Shrimp and Vegetables. Add the peeled and deveined shrimp along with the chopped red and yellow bell peppers, red onion chunks, and zucchini rounds to the bowl. Toss everything gently to coat evenly with the marinade. Cover the bowl and refrigerate for at least 20 minutes to allow the flavors to meld.
- Preheat the Grill. Heat your grill or grill pan over medium-high heat, ensuring it’s hot enough to sear the food and create appealing grill marks.
- Thread the Skewers. Alternate threading shrimp and different vegetables onto the metal or soaked wooden skewers, creating a colorful and balanced presentation.
- Grill the Skewers. Place the skewers on the hot grill and cook for 2–3 minutes per side. Turn carefully with tongs until the shrimp turn pink and opaque, and the vegetables are tender with nicely charred grill marks.
- Serve. Remove the skewers from the grill and serve immediately while hot. They can be enjoyed on their own or accompanied by rice or a fresh side salad for a complete Mediterranean meal.
Notes
- You can substitute other vegetables such as mushrooms or cherry tomatoes according to your preference.
