Homemade Teriyaki Sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon cornstarch mixed with 1 tablespoon water (cornstarch slurry)
Instructions
- Prepare Teriyaki Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and the cornstarch slurry. Set the sauce aside to use later.
- Cook Shrimp: Heat vegetable oil in a large skillet or wok over medium-high heat. Season the shrimp with salt and pepper, then cook for 2 to 3 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set aside.
- Sauté Aromatics and Zucchini: In the same pan, add a little more oil if necessary. Sauté the minced garlic and ginger for about 30 seconds until fragrant. Add the sliced zucchini and stir-fry for 3 to 4 minutes until the zucchini is slightly tender but still crisp.
- Combine and Finish: Return the cooked shrimp to the pan. Pour the prepared teriyaki sauce over the shrimp and zucchini. Toss everything together and cook for 1 to 2 minutes until the sauce thickens and coats all the ingredients evenly.
