- Simmer Tomato Sauce: Add diced tomatoes, ground cumin, smoked paprika, and salt. Let the mixture simmer for 5 to 7 minutes, stirring occasionally, until it thickens slightly.
- Make Wells and Cook Eggs: Use a spoon to create 4 small wells in the sauce. Crack one egg into each well gently. Cover the skillet and cook for 5 to 7 minutes until eggs reach desired doneness.
- Warm Tortillas: While eggs are cooking, warm the corn tortillas in a dry skillet or microwave until soft and pliable.

- To bake the eggs instead of cooking stovetop, transfer the skillet to a 375°F oven and bake uncovered for 7–10 minutes until eggs are set.
