Ingredients
Scale
Potatoes and Ham
- 2 pounds russet or Yukon Gold potatoes, peeled and thinly sliced
- 2 cups cooked ham, diced
- 2 cups shredded mozzarella cheese, divided
Cheese and Sauce
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground nutmeg
- Cooking spray for slow cooker
Instructions
- Prepare the slow cooker: Lightly grease a 6-quart slow cooker with cooking spray to prevent sticking and facilitate easy serving.
- Mix the sauce: In a large bowl, combine the cream of mushroom soup, cream of chicken soup, heavy cream, minced garlic, salt, black pepper, dried thyme, and ground nutmeg. Stir until the mixture is smooth and creamy.
- Layer the ingredients: Place half of the thinly sliced potatoes at the bottom of the slow cooker. Evenly sprinkle half of the diced ham and 1 cup of shredded mozzarella cheese over the potatoes. Pour half of the soup mixture evenly across the top.
- Repeat layering: Add the remaining potatoes, diced ham, and mozzarella cheese in the same order. Pour the remaining soup mixture over the final layer.
- Add Parmesan topping: Sprinkle the 1/2 cup grated Parmesan cheese evenly on top of all the layers for a flavorful crust.
- Cook the casserole: Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are tender and the dish is bubbly throughout.
- Browning the top: Approximately 15 minutes before serving, remove the lid to allow the top to brown slightly for better texture and appearance.
- Rest and serve: Let the casserole rest for 5 minutes before serving to allow it to set and make it easier to serve.
Notes
- For extra flavor and texture, add sautéed onions or mushrooms between the layers.
- You can substitute cooked chicken for ham to vary the protein.
- Leftovers keep well in the refrigerator for up to 3 days and reheat nicely in the microwave or oven.
