For the Pancakes:
- 1 cup all-purpose flour
- 2 tablespoons cocoa powder

- 1 large egg
- 2 tablespoons melted butter (plus more for the pan)
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
- 1/2 cup mini marshmallows
- 1/4 cup chocolate syrup or melted chocolate
- 2 graham crackers, crushed
- Whipped cream (optional)
- Toasted marshmallows (optional but highly recommended)
Instructions
- Make the Pancakes: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined. In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract together. Pour the wet ingredients into the dry ingredients and stir gently until just combined. If desired, fold in the mini chocolate chips for added chocolate bursts.
- Cook the Pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease with butter. Pour approximately 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the pancake surface and the edges look set, about 2-3 minutes. Flip carefully and cook the other side until golden, fluffy, and fully cooked through, about another 2 minutes. Repeat with the remaining batter.
- Assemble the S’mores Stack: On a serving plate, stack the pancakes and sprinkle mini marshmallows between each layer to allow them to melt slightly from the warmth. Drizzle the stack generously with chocolate syrup or melted chocolate. Sprinkle crushed graham crackers over the top, and finish with extra mini marshmallows, whipped cream, or a toasted marshmallow crowning the stack for an authentic s’mores experience.

- For extra gooey marshmallows, toast them lightly using a kitchen torch or broiler before placing them on the pancakes.
- Mini chocolate chips are optional but add extra chocolate bursts in every bite.
