Ingredients
Scale
Crust
- 1 cup graham cracker crumbs
- 3 tbsp sugar
- 4 tbsp unsalted butter, melted
Filling
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 large egg
Topping
- 2 tbsp sugar
- 1 tsp cinnamon
Instructions
- Prepare Crust: Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners. In a small bowl, combine graham cracker crumbs, sugar, and melted butter. Press approximately 1 tablespoon of this mixture firmly into each muffin liner to create the crust base.
- Make Filling: In a mixing bowl, beat the softened cream cheese and sugar until the mixture is smooth and creamy. Add the vanilla extract and the egg, then mix thoroughly until everything is fully combined and smooth.
- Fill Muffin Liners: Spoon the cream cheese filling into each muffin liner, filling them almost to the top to allow room for expansion while baking.
- Add Topping: In a small bowl, mix together the cinnamon and sugar. Sprinkle this cinnamon-sugar mixture generously over the cheesecake filling in each muffin liner.
- Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the cheesecake bites are set and slightly firm to the touch. Remove from the oven and allow them to cool completely at room temperature.
- Chill and Serve: Once cooled, refrigerate the cheesecake bites for at least 1 hour to chill thoroughly. Remove from the fridge, peel off the paper liners, and serve chilled for the best flavor and texture.
Notes
- Make sure the cream cheese is softened to room temperature to ensure a smooth filling without lumps.
- Press the crust mixture firmly into the liners for a sturdy base that holds together well.
- Do not overfill the muffin liners to prevent spilling over during baking.
- Chilling the bites not only sets the cheesecake but enhances the flavor and texture.
- Store leftover cheesecake bites in an airtight container in the refrigerator for up to 3 days.
