Ingredients
Scale
Soup Base
- 1 tbsp oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 1 green chili, chopped
Main Ingredients
- 1 lb chicken breast, shredded
- 4 cups chicken broth
- 2 carrots, sliced
- 1 tbsp soy sauce
Toppings
- Lime (for squeezing)
- Fresh cilantro (for garnish)
Instructions
- Sauté Aromatics: Heat the oil in a pot over medium heat. Add the diced onion, minced garlic, grated ginger, and chopped green chili. Sauté until fragrant and the onion becomes translucent, about 2-3 minutes.
- Add Carrots and Broth: Stir in the sliced carrots and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low and simmer gently for 10 minutes, or until the carrots are tender.
- Add Chicken and Soy Sauce: Add the shredded chicken and soy sauce to the pot. Continue to simmer for another 5 minutes to allow the flavors to meld and the chicken to heat through fully.
- Serve: Ladle the hot soup into bowls. Garnish each serving with a squeeze of fresh lime juice and a sprinkle of chopped cilantro. Serve immediately and enjoy the spicy, aromatic goodness.
Notes
- Adjust the amount of green chili to control the spice level.
- Use low-sodium chicken broth and soy sauce to reduce salt content if desired.
- For extra richness, add a splash of coconut milk.
- This soup can be stored refrigerated for up to 3 days and reheated gently on the stove.
- Optional: Add other vegetables such as celery or mushrooms for more texture.
