Ingredients
Scale
Noodles
- 8 oz noodles (lo mein, ramen, or spaghetti)
Sauce and Aromatics
- 3 tbsp vegetable oil
- 6 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp chili paste or sriracha
- 1 tsp red pepper flakes (adjust to heat preference)
- 1 tsp sesame oil
- 1 tsp sugar
Garnish
- 2 green onions, sliced
- Sesame seeds, for garnish
Instructions
- Cook Noodles: Cook the noodles according to the package instructions until al dente. Once done, drain and set aside to prepare the sauce.
- Sauté Garlic: Heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for about 30 seconds or until fragrant, being careful not to burn it.
- Make the Sauce: Stir in the soy sauce, oyster sauce (if using), chili paste or sriracha, red pepper flakes, sesame oil, and sugar into the garlic oil. Mix well to combine all the flavors.
- Toss Noodles in Sauce: Add the cooked noodles to the skillet and toss thoroughly to coat every strand evenly with the spicy garlic sauce.
- Serve and Garnish: Remove the skillet from heat. Garnish the noodles with sliced green onions and a sprinkle of sesame seeds. Serve immediately for best flavor and texture.
Notes
- You can adjust the spiciness by increasing or decreasing the amount of chili paste and red pepper flakes according to your heat preference.
- Oyster sauce is optional but adds a deeper umami flavor; you can substitute it with hoisin sauce for a different sweetness.
- Use fresh garlic for the best aromatic flavor; pre-minced garlic may not deliver the same depth.
- For a gluten-free version, use tamari or gluten-free soy sauce and check your noodle choice carefully.
- Leftovers can be refrigerated and reheated in a skillet or microwave, but noodles may absorb sauce and become less saucy.
