Crust

- 1 cup maraschino cherries, chopped
Instructions
- Make the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and vanilla extract until well mixed. Press this mixture evenly into the bottom of a greased 9×9-inch baking dish. Bake the crust for 10 minutes to set it, then remove from the oven and allow it to cool completely.
- Prepare the Chocolate Layer: In a small saucepan over medium heat, warm the heavy cream until it just begins to simmer. Remove the pan from the heat and stir in the semi-sweet chocolate chips until completely melted and smooth. Add vanilla extract and mix thoroughly. Pour this chocolate mixture evenly over the cooled crust. Place the dish in the refrigerator and chill for 30 minutes to let this layer set.
- Make the Pistachio Layer: In a bowl, whisk together the pistachio pudding mix, heavy cream, and milk until the mixture thickens and becomes creamy. Spread this pistachio pudding mixture evenly over the set chocolate layer. Return the dish to the refrigerator for another 30 minutes to allow this layer to firm up.
- Prepare the Cherry Layer: Using a mixer, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Carefully fold in the chopped maraschino cherries to keep the mixture light and fluffy. Spread this cherry cream evenly over the pistachio layer. Refrigerate for 2 to 3 hours, or until the entire dessert has fully set and is chilled.
