Description

This St Patrick’s Day Mojito Sherbet Punch is a refreshing and festive cocktail perfect for celebrating with friends and family. Combining the cool zest of lime sherbet with fresh mint, white rum, and fizzy club soda, this punch offers a unique twist on the classic mojito, served chilled with a delightful sherbet float.

Ingredients

Scale

Ingredients

  • 2 cups lime sherbet
  • 1 cup fresh mint leaves
  • 2 cups club soda
  • 1 cup white rum
  • 1 cup lime juice
  • 2 tablespoons sugar
  • Ice cubes (as needed)

Instructions

  1. Prepare Lime Mixture: In a large bowl, combine 1 cup of lime juice and 2 tablespoons of sugar. Stir well until the sugar is mostly dissolved to create a sweetened lime base.
  2. Muddle Mint Leaves: Add 1 cup of fresh mint leaves into the lime mixture. Gently muddle the mint with a muddler or spoon to release its aromatic oils without tearing the leaves too much.
  3. Add Rum: Pour 1 cup of white rum into the bowl and stir to blend it evenly with the lime and mint mixture.
  4. Add Club Soda: Slowly pour in 2 cups of club soda and gently stir to combine the fizzy soda with the mojito base, maintaining the carbonation.
  5. Prepare Serving Bowl: In a large serving bowl or punch bowl, add plenty of ice cubes to keep the punch chilled throughout serving.
  6. Add Sherbet: Scoop 2 cups of lime sherbet on top of the ice in the serving bowl. The sherbet will slowly melt and infuse the punch with creamy lime flavor.
  7. Combine and Garnish: Pour the prepared mojito mixture over the sherbet and ice. Garnish with additional fresh mint leaves for a vibrant presentation and extra freshness.

Notes

  • For a non-alcoholic version, omit the white rum and increase club soda to 3 cups.
  • Muddling the mint gently prevents bitterness and keeps a fresh herbal aroma.
  • Add more sugar if a sweeter punch is desired.
  • This punch is best served immediately to enjoy the fizz and sherbet texture.
  • Use fresh lime juice for the brightest flavor, not bottled juice.
