Description

This Strawberry Pretzel Ice Cream Cake combines a crunchy, salty pretzel crust with creamy layers of cream cheese and strawberry ice cream, topped with whipped cream and fresh strawberries for a delightful, refreshing dessert perfect for warm days or special occasions.

Ingredients

Scale

Crust

  • 2 cups pretzel crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

Filling and Topping

  • 1 quart strawberry ice cream, softened
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipped cream
  • 1/2 cup fresh strawberries, sliced
  • 1/4 cup strawberry sauce (optional)

Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the pretzel crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.
  2. Bake the crust: Press the pretzel mixture firmly into the bottom of a 9-inch springform pan. Bake the crust in the oven for about 10 minutes until lightly golden. Remove from the oven and allow it to cool completely.
  3. Make cream cheese layer: In a separate bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy. Spread this mixture evenly over the cooled pretzel crust. Place the pan in the refrigerator and chill for 30 minutes to set the layer.
  4. Add the ice cream layer: Spread the softened strawberry ice cream evenly over the cream cheese layer. Cover the cake with plastic wrap and freeze for at least 4 hours, or until the ice cream is firm.
  5. Finish and garnish: Once firm, remove the cake from the freezer. Spread whipped cream evenly over the ice cream layer, and garnish with sliced fresh strawberries. Optionally, drizzle strawberry sauce on top. Return the cake to the freezer for an additional 1-2 hours to let the topping set before serving.

Notes

  • Make sure the strawberry ice cream is softened to make spreading easier but not melted.
  • You can substitute cream cheese with mascarpone for a richer flavor.
  • For extra crunch, sprinkle chopped pretzels over the whipped cream topping.
  • Use a springform pan for easy removal of the cake.
  • Allow the cake to sit at room temperature for 5-10 minutes before slicing for easier cuts.
