Instructions

  1. Prepare the Strawberry Sauce: In a small saucepan over medium heat, combine the chopped strawberries and sugar. Cook for about 5–7 minutes, stirring occasionally, until the strawberries release their juices and soften. Mash slightly with a fork to create a chunky sauce, then remove from heat and let it cool completely.
  2. Blend the Cheesecake Mixture: In a blender, combine the softened cream cheese, Greek yogurt, whole milk, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and creamy, ensuring no lumps remain.
  3. Assemble the Ice Pops: Spoon a small amount of the cooled strawberry sauce into each ice pop mold. Pour in some of the cheesecake mixture, alternating layers to create distinct swirls. Use a skewer or a knife to gently swirl the strawberry sauce and cheesecake mixture together in the mold for a marbled effect.
  4. Freeze: Insert sticks into the molds and place them in the freezer. Freeze for at least 6 hours or overnight until the ice pops are fully set and firm.
