Ingredients
Scale
Salad
- Mixed salad greens (such as spinach, arugula, or mixed baby greens), enough for 4 servings
- 1 cup strawberries, sliced
- 1 cup blueberries
- 1 cup raspberries or blackberries
- 1/4 cup sliced almonds, toasted
- 1/4 cup crumbled feta cheese or goat cheese
- Optional: fresh mint leaves, for garnish
Dressing
- 1/4 cup olive oil
- 2 tbsp lemon juice, freshly squeezed
- 1 tbsp honey or maple syrup
- 1 tsp Dijon mustard
- 1 tsp poppy seeds
Instructions
- Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, honey (or maple syrup), Dijon mustard, and poppy seeds until combined and smooth. Set the dressing aside to allow flavors to meld.
- Combine Salad Ingredients: In a large salad bowl, add the mixed salad greens, sliced strawberries, blueberries, raspberries or blackberries, and toasted sliced almonds. Gently toss to mix the ingredients evenly.
- Add Dressing: Drizzle the prepared Lemon Poppy Seed Dressing over the salad. Toss gently to coat all the ingredients evenly without bruising the berries or wilting the greens.
- Add Cheese: Sprinkle the crumbled feta cheese or goat cheese evenly over the top of the dressed salad to add a creamy, tangy contrast to the sweet berries.
- Garnish and Serve: Garnish the salad with fresh mint leaves if desired. Serve immediately to enjoy the fresh flavors and crisp textures of this summer salad.
Notes
- To toast almonds, spread sliced almonds on a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant and lightly browned.
- For a vegan option, substitute the honey with maple syrup and omit the cheese or use a plant-based cheese alternative.
- Use fresh, ripe berries for best flavor and texture.
- This salad is best served immediately to prevent the greens from wilting.
- You can add grilled chicken or nuts for extra protein to make it a more substantial meal.
