Ingredients
Scale
Chicken and Vegetables
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into wedges
Marinade and Seasoning
- 1/2 cup barbecue sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Other
- Wooden or metal skewers (if wooden, soak in water for at least 30 minutes before use)
Instructions
- Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Make the Marinade: In a medium bowl, whisk together barbecue sauce, honey, olive oil, smoked paprika, garlic powder, salt, and black pepper until well combined.
- Marinate the Chicken: Add the chicken cubes to the marinade and toss thoroughly to coat each piece evenly. Let it sit while you prepare the vegetables and skewers.
- Assemble the Kebabs: Thread the marinated chicken pieces alternately with red bell pepper, green bell pepper, and red onion wedges onto the skewers, ensuring even distribution for balanced cooking.
- Preheat the Grill: Heat your grill or grill pan to medium-high heat to ensure a perfect sear without burning.
- Cook the Kebabs: Place the skewers on the grill and cook for 12 to 15 minutes, turning occasionally to brown all sides and cook the chicken through.
- Finish with Sauce: In the final few minutes of grilling, brush extra barbecue sauce over the kebabs if desired for added flavor and glaze.
- Rest and Serve: Remove the kebabs from the grill and allow them to rest for 5 minutes to let juices redistribute before serving.
Notes
- Feel free to add other vegetables like zucchini, mushrooms, or cherry tomatoes for added variety and color.
- If you don’t have a grill, you can bake the kebabs at 400°F for 20 to 25 minutes, turning halfway through for even cooking.
- Serve with additional barbecue sauce on the side for dipping.
