For the Burgers

  • 1 (10-ounce) package Birds Eye® Steamfresh® Sweet Peas
  • 2 medium russet potatoes, peeled and cubed
  • 1/2 sweet onion, chopped
  • 1 cup crumbled feta cheese
  • 1 tablespoon fresh dill, minced
  • 1 tablespoon fresh parsley, minced
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil (for spraying)

For the Sauce

  • 1 cup Greek yogurt
  • 1 tablespoon fresh dill, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1/3 cup crumbled feta cheese
  • Salt and black pepper to taste

To Serve

  • Toasted buns
  • Fresh tomato slices
  • Fresh onion slices
  • Arugula


Instructions

  1. Prepare the Sweet Peas: Blanch the sweet peas in boiling water for 2-3 minutes to soften them. Drain thoroughly and mash them in a bowl using a fork until mostly smooth.
  2. Cook the Potatoes: Boil the peeled and cubed russet potatoes in salted water until tender, about 10-15 minutes. Drain well and allow them to cool for about 10 minutes before handling.
  3. Mix the Burger Ingredients: In the bowl with the mashed sweet peas, add the cooled potatoes, chopped sweet onion, crumbled feta cheese, minced fresh dill, minced parsley, the egg, salt, black pepper, and paprika. Mix all ingredients thoroughly until well combined to form the burger mixture.
  4. Form the Patties: Shape the mixture into patties approximately 4 inches in diameter. Place the formed patties on a tray and refrigerate for 30 minutes to help them firm up and hold their shape during cooking.
  5. Make the Sauce: In a separate bowl, combine the Greek yogurt, minced dill, lemon zest, lemon juice, and crumbled feta cheese. Season with salt and black pepper to taste. Mix well and refrigerate until ready to serve.
  6. Cook the Patties: Lightly spray both sides of the patties with olive oil to prevent sticking. Preheat an air fryer to 375°F (190°C) and cook the patties for about 15 minutes, flipping halfway through, until they are golden brown and cooked through.
  7. Assemble the Burgers: Place each cooked patty on a toasted bun, then top with a generous spoonful of the creamy yogurt sauce, fresh tomato slices, onion slices, and arugula. Serve immediately and enjoy your flavorful and wholesome pea and feta burgers.
