Description

This Delicious Sweet Potato Shepherd’s Pie is a comforting and nutritious twist on the classic dish, featuring a creamy mashed sweet potato topping over a hearty lentil and vegetable filling. Made with wholesome ingredients and seasoned with fragrant herbs, it’s a perfect vegetarian and gluten-free meal suitable for family dinners.

Ingredients

Scale

Vegetable Topping

  • 2 pounds sweet potatoes
  • 2 tablespoons butter
  • 1/4 cup milk

Filling

  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup cooked lentils
  • 1 cup low-sodium vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Prepare Sweet Potatoes: Peel and cube the sweet potatoes. Boil them in a pot of water for 15-20 minutes or until fork-tender. Drain and mash sweet potatoes with butter and milk until smooth. Set aside.
  2. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add chopped onion, carrots, and celery. Cook and stir for about 10 minutes until the vegetables are softened and fragrant.
  3. Combine Lentils and Broth: Stir the cooked lentils into the sautéed vegetables. Pour in the low-sodium vegetable broth. Season the mixture with thyme, rosemary, salt, and pepper. Let it simmer gently for 10 minutes to allow the flavors to meld.
  4. Assemble Shepherd’s Pie: Preheat your oven to 400°F (200°C). Spread the lentil and vegetable mixture evenly in a baking dish. Carefully spread the mashed sweet potatoes on top, smoothing the surface.
  5. Bake: Place the assembled dish in the oven and bake uncovered for 35-45 minutes, or until the top turns golden brown and the filling is bubbly. Remove from oven and let it cool slightly before serving.

Notes

  • You can substitute milk and butter with plant-based alternatives to make the dish vegan.
  • For extra texture, sprinkle some grated cheese on top before baking (if not vegan).
  • Feel free to add other vegetables like peas or corn to the filling.
  • Use fresh herbs if available for a more vibrant flavor.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
