Instructions
- Prepare Sweet Potatoes: Peel and cube the sweet potatoes. Boil them in a pot of water for 15-20 minutes or until fork-tender. Drain and mash sweet potatoes with butter and milk until smooth. Set aside.
- Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add chopped onion, carrots, and celery. Cook and stir for about 10 minutes until the vegetables are softened and fragrant.
- Combine Lentils and Broth: Stir the cooked lentils into the sautéed vegetables. Pour in the low-sodium vegetable broth. Season the mixture with thyme, rosemary, salt, and pepper. Let it simmer gently for 10 minutes to allow the flavors to meld.
- Assemble Shepherd’s Pie: Preheat your oven to 400°F (200°C). Spread the lentil and vegetable mixture evenly in a baking dish. Carefully spread the mashed sweet potatoes on top, smoothing the surface.
