Instructions
- Cook the pasta: Bring 4.2 cups of water to a boil in a large pot. Add 1/2 tsp salt and 8.8 oz short pasta. Cook until al dente according to package instructions. Drain the pasta and rinse under cold water to stop cooking. Set aside to cool.
- Prepare strawberry sauce: In a bowl, combine 10.5 oz hulled and sliced fresh strawberries, 2 tbsp sugar, and 1 tsp lemon juice. Mash roughly with a fork or potato masher. Allow the mixture to stand for 5 to 10 minutes to release the natural juices from the strawberries.
- Mix yogurt: In a separate bowl, whisk together 8.8 oz Greek yogurt (or plain full-fat yogurt) with 2 tbsp honey or maple syrup and 1/2 tsp vanilla extract until the mixture is smooth and creamy.
- Combine pasta and sauce: Gently toss the cooled pasta with the strawberry sauce until the pasta is evenly coated with the strawberry mixture.
- Incorporate yogurt mixture: Fold the yogurt mixture into the pasta and strawberry sauce combination gently, reserving a few spoonfuls of yogurt mixture for drizzling on top at serving.
- Serve with garnishes: Transfer the pasta to serving bowls. Top with the additional 1.8 oz sliced fresh strawberries, drizzle the reserved yogurt mixture on top, and sprinkle with 2 tbsp roasted slivered almonds and fresh mint leaves if desired for added texture and freshness.
