Chicken and Vegetable Ingredients

Marinade Ingredients

  • 1/4 cup rice vinegar
  • 3 teaspoons sesame oil
  • 1 cup low-sodium soy sauce
  • 6 cloves garlic, minced
  • 1/4 teaspoon dried ginger

Instructions

  1. Prepare the marinade: Whisk together granulated sugar, rice vinegar, sesame oil, low-sodium soy sauce, minced garlic, dried ginger, and red pepper flakes in a large bowl until the sugar is dissolved and the mixture is well combined. Reserve 2/3 cup of this marinade to use later for basting.
  2. Marinate the chicken: Add the cubed chicken breasts to the remaining marinade in the bowl, stir thoroughly to coat all pieces evenly. Cover the bowl tightly with a lid or plastic wrap and refrigerate for at least 3 hours, preferably up to 12 hours to enhance the flavor.
  3. Assemble the kebabs: Thread the marinated chicken, green bell pepper cubes, and pineapple chunks alternately onto 10 skewers, distributing the ingredients evenly for balanced flavor and cooking.
