Instructions
- Melt Butter: Place a medium saucepan over medium heat and melt the butter until just foamy, preparing the base for the roux.
- Make Roux: Whisk in the flour and cook for 1–2 minutes until golden, then slowly pour in the milk while whisking constantly to avoid lumps and create a smooth mixture.
- Thicken Milk: Let the milk warm gently on medium heat, stirring frequently until it slightly thickens, about 5 minutes.
- Add Cheese: Lower the heat to low and add sharp cheddar and Monterey Jack cheeses a handful at a time, stirring continuously until fully melted and creamy.
- Incorporate Flavors: Stir in drained diced tomatoes with green chiles, chopped jalapeño, garlic powder, onion powder, salt, and cumin. Allow the mixture to simmer for 5 minutes, stirring occasionally to blend flavors.
- Finish with Lime and Cilantro: Add lime juice and chopped fresh cilantro if using. Taste and adjust seasonings to your preference.
- Serve Warm: Pour the queso into a warm bowl and serve immediately with tortilla chips, vegetables, or your favorite dippers.
