Ingredients

Scale

Sauce Ingredients

  • 1 cup Pineapple Preserves/Jam (Or use pureed fresh pineapple for a lighter option)
  • 1 can Canned Pineapple Chunks (Ensure it’s drained before use)
  • 1/2 cup Ketchup (Can substitute with barbecue sauce)
  • 1/4 cup Low-Sodium Soy Sauce (Use regular if preferred)
  • 1/4 cup Light Brown Sugar (Can substitute with honey or maple syrup)
  • 2 tablespoons Rice Wine Vinegar (White wine vinegar can serve as a substitute)
  • 2 tablespoons Lime Juice (Fresh lime juice is preferable)
  • 1 tablespoon Sesame Oil (Can substitute with olive oil or omit)
  • 1 tablespoon Asian Chili-Garlic Sauce (Omit or reduce for milder flavor)
  • 3 cloves Garlic (Fresh garlic is best, minced)
  • 1 teaspoon Ground Ginger (Use fresh ginger if desired)
  • Salt & Pepper to taste (Adjust to personal preference)

Chicken and Garnish

  • 2 pounds Boneless Skinless Chicken Breasts (Cut into 1-inch pieces)
  • 2 tablespoons Cornstarch (Thickens the sauce)
  • 1 tablespoon Olive Oil (Helps prevent sticking)
  • 1/4 cup Fresh Cilantro (Can replace with parsley, chopped)
  • 1/4 cup Green Onions (Chopped)

Instructions

  1. Prepare the sauce: In a large bowl, combine pineapple preserves, drained pineapple chunks, ketchup, low-sodium soy sauce, light brown sugar, rice wine vinegar, lime juice, sesame oil, chili-garlic sauce, minced garlic, ground ginger, salt, and pepper. Mix thoroughly until well combined to create the flavorful sauce.
  2. Prepare the slow cooker: Line your slow cooker with a liner if using one, then drizzle a bit of olive oil at the bottom to prevent sticking and facilitate easy cleanup.
  3. Coat the chicken: Place the cut chicken pieces into a zip-top bag along with the cornstarch. Shake gently to coat the chicken evenly, which will help thicken the sauce during cooking.
  4. Combine chicken and sauce: Transfer the coated chicken pieces into the slow cooker. Add the juicy pineapple chunks from the sauce mixture and pour the prepared sauce evenly over everything.
  5. Cook the chicken: Cover the slow cooker and cook on high for about 2 hours or on low for about 4 hours. Check for doneness by ensuring the chicken reaches an internal temperature of 165°F and is tender.
  6. Serve and garnish: Carefully transfer the chicken and sauce to a serving dish. Garnish with freshly chopped cilantro and green onions. Serve warm over rice or noodles for a complete meal.

Notes

  • Using fresh pineapple puree instead of preserves can make the dish lighter and less sweet.
  • Adjust the amount of Asian chili-garlic sauce to control the spice level.
  • For a gluten-free version, ensure soy sauce is gluten-free or substitute with tamari.
  • To save time, line the slow cooker with a liner for quick cleanup.
  • Serve with steamed rice or noodles to soak up the delicious sauce.
  • Chicken thighs can be used instead of breasts for a juicier texture.
