Description

This Tzatziki Chicken Salad is a refreshing Mediterranean-inspired dish combining tender cooked chicken with crisp romaine lettuce, grape tomatoes, pepperoncini, Kalamata olives, and red onion, all generously dressed with a creamy homemade tzatziki sauce and topped with crumbled feta cheese. It’s a light, flavorful, and easy-to-prepare salad perfect for a healthy lunch or dinner.

Ingredients

Scale

For the Tzatziki Sauce

  • 1 cup + 2 Tbsp plain Greek yogurt
  • ½ cucumber, grated
  • 2 to 3 garlic cloves, pressed
  • 2 Tbsp olive oil
  • 2 Tbsp fresh dill, chopped
  • Salt and pepper to taste

For the Salad

  • 2 cups cooked chicken, chopped
  • 2 cups romaine lettuce, chopped
  • 1 cup grape tomatoes, halved
  • ½ cup pepperoncini peppers, sliced
  • ½ cup Kalamata olives, sliced
  • ¼ cup red onion, chopped
  • ½ cup feta cheese, crumbled

Instructions

  1. Prepare the Tzatziki: In a bowl, mix the plain Greek yogurt, grated cucumber, pressed garlic cloves, olive oil, and fresh dill. Season with salt and pepper to taste, then stir until the sauce is smooth and well combined.
  2. Assemble the Salad: In a large mixing bowl, combine the chopped romaine lettuce, halved grape tomatoes, sliced pepperoncini peppers, sliced Kalamata olives, and chopped red onion. Toss gently to mix all the vegetables evenly.
  3. Add the Chicken: Layer the chopped cooked chicken evenly over the assembled vegetable salad to ensure each serving will have protein.
  4. Dress with Tzatziki: Generously spoon the prepared tzatziki sauce over the salad and chicken, spreading it evenly to complement all the ingredients with creamy tangy flavors.
  5. Garnish & Serve: Sprinkle the crumbled feta cheese on top of the salad for a savory finish. Serve immediately for the best texture and flavor experience.

Notes

  • Use Greek yogurt for a thicker and creamier tzatziki sauce.
  • Grate the cucumber and squeeze out excess moisture to prevent the sauce from being watery.
  • Cooked chicken can be grilled, baked, or rotisserie; use your preferred cooking method.
  • Adjust garlic quantity based on your taste preference.
  • This salad is best served fresh but can be stored in the refrigerator for up to 1 day.
