These Vegan Peanut Butter Cups are a delicious dairy-free and egg-free twist on the classic Reese’s treat. Made with smooth peanut butter sweetened with powdered sugar and coated in rich vegan chocolate, these cups offer a perfect blend of sweet and salty flavors. Chocolate Layer
- 300 g vegan chocolate
- 1 teaspoon flaky sea salt (for sprinkling)
Peanut Butter Filling
- 175 g smooth peanut butter
- 40 g powdered sugar (confectioner’s/icing sugar)
Instructions
- Prepare muffin tray: Line a muffin tray with 9 muffin cases to hold the peanut butter cups securely during setting.
- Melt the chocolate: Finely chop the vegan chocolate and place it in a heat-resistant bowl. Set the bowl over a saucepan with about a quarter full of simmering water (bain-marie). Stir occasionally with a rubber spatula until the chocolate is melted evenly.
- Create base chocolate layer: Spoon one tablespoon of melted chocolate into each muffin case. Swirl the chocolate around each case so it coats the edges evenly. Place the tray in the fridge and let the chocolate set for at least 10 minutes.
- Prepare peanut butter filling: In a bowl, mix the smooth peanut butter with powdered sugar using a spoon until the mixture is smooth. Transfer the mixture and spoon or pipe it evenly into each chilled chocolate cup. Gently shake the muffin tray to help the peanut butter level out.
- Top with chocolate and chill: Pour the remaining melted chocolate over the peanut butter layers, covering them completely. Refrigerate the tray again for 30 minutes or until firm. Once set, sprinkle each cup with flaky sea salt for an added burst of flavor.
- Storage: Store finished peanut butter cups in an airtight container in the refrigerator for up to 2 weeks. For longer storage, freeze in an airtight container for up to 3 months. Keep the muffin liners on or separate layers with parchment paper to prevent sticking.
