Description

A refreshing and vibrant Watermelon Feta Salad that combines the sweetness of juicy watermelon with the creaminess of feta cheese, crisp cucumber, and aromatic fresh herbs. Tossed in a honey-lime dressing with a hint of olive oil and kosher salt, this salad is perfect for summer gatherings or a light, healthy snack.

Ingredients

Scale

Salad Ingredients

  • 1/2 watermelon (seedless variety preferred), cut into cubes
  • 1 English or Hot House cucumber, sliced
  • 15 fresh mint leaves
  • 15 fresh basil leaves
  • 1/2 cup (about 120 ml) creamy feta cheese, block feta preferred

Dressing Ingredients

  • 2 tablespoons (30 ml) honey
  • 2 tablespoons (30 ml) freshly squeezed lime juice
  • 1 to 2 tablespoons (15 to 30 ml) extra virgin olive oil
  • Pinch of kosher salt

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together 2 tablespoons honey, 2 tablespoons lime juice, 1 to 2 tablespoons extra virgin olive oil, and a pinch of kosher salt until well combined. Set the dressing aside briefly to allow the flavors to meld.
  2. Combine Salad Ingredients: Place the cubed watermelon, sliced cucumber, fresh mint leaves, and fresh basil leaves in a large bowl or serving platter with sides. Gently mix these ingredients by hand or with a large spoon, taking care not to bruise or break the watermelon cubes to preserve their texture.
  3. Toss with Dressing: Drizzle the prepared dressing evenly over the watermelon, cucumber, and herb mixture. Toss lightly and evenly using your hands to coat all ingredients without crushing the watermelon.
  4. Add Feta and Serve: Sprinkle the creamy feta cheese on top of the salad just before serving. Serve immediately to maintain the freshness and texture of the salad.

Notes

  • Seedless watermelon is preferred for texture but regular watermelon works as well.
  • Use block feta cheese for better texture over crumbled varieties.
  • This salad is best served immediately but can be refrigerated for up to 2 hours.
  • Adjust the amount of olive oil in the dressing to taste.
  • Fresh herbs are key to the bright flavor; do not substitute with dried herbs.
