Description
Delicious and easy-to-make Chocolate No-Bake Cookies that combine rich cocoa, creamy peanut butter, and oats into a quick treat without the need for an oven.
Ingredients
Scale
Chocolate Mixture
- 1/2 cup unsalted butter
- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
Mix-ins
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 3 cups quick oats
Instructions
- Combine Ingredients: In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder. Stir continuously until the mixture is smooth.
- Boil Mixture: Bring the mixture to a boil and let it boil for 1 minute, stirring constantly to ensure the sugar dissolves completely and prevent burning.
- Add Peanut Butter and Vanilla: Remove the saucepan from heat. Stir in peanut butter and vanilla extract until the mixture is thoroughly combined and smooth.
- Mix in Oats: Add quick oats to the chocolate mixture and stir until all oats are evenly coated with the chocolate-peanut butter mixture.
- Form Cookies: Using a spoon, scoop the mixture onto a parchment-lined baking sheet, shaping each mound into a cookie-sized portion.
- Set Cookies: Let the cookies set at room temperature for about 30 minutes, or place them in the refrigerator for 15 minutes to speed up the setting process.
Notes
- Quick oats are preferred as they absorb the chocolate mixture better and set faster; regular rolled oats may alter texture and setting time.
- Ensure you boil the mixture for the full minute to achieve the right consistency for the cookies to set properly.
- Store cookies in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
- For a nut-free version, substitute peanut butter with sunflower seed butter or omit entirely, but note texture differences.
